Al pastor scallop

Pan-seared scallop in achiote sauce, paired with pineapple caviar, topped with serrano pepper cream drizzle and chorizo crumble. 

Beef Cheek Barbacoa Taco

Slow-braised beef cheek, hand-made cilantro poblano corn tortilla, garnished with pickled fresno peppers, crisp watermelon radish, and microgreens.  

Birria lamb shank

Whole lamb shank simmered in guajillo and cinnamon birria base, on top of a saffron queso blend polenta, garnished with fresh microgreens. 

Apple galette

Honey crisp and granny smith apple medley tossed in cinnamon sugar in an open-faced pie crust finished with a caramel drizzle and pearl sugared crust.
